The end of the semester is coming and boy has it been busy! So busy in fact that I had a hard time doing volunteer hours outside of school functions. My professor wanted us to do some volunteer work for a grade, but unfortunately I did not get the time to. Fortunately my professor is very kind and understanding so, she gave us an alternative assignment to make a recipe for a specific group of people. The group of people I chose were busy people looking to add some fiber into their diet.
Fun fact: Women should get 21-25 grams of fiber daily and men should get 30-38 grams daily.
Another fun fact: Most people don't meet those needs!
Although this recipe, admittedly, doesn't have a whole lot of fiber, it does have some and a lot of people get little to none. So, if you want something a little sweet, but good for you then check out the video and the recipe below!
Oat Apple Muffins
Calories: 209 per muffin
Servings: 12
2 cups (260 g) all-purpose flour
½ cup (100 g) granulated sugar
2 teaspoons baking powder
½ teaspoon salt
¾ cup (180 ml) milk, room temperature
½ cup (114 g) unsalted butter, melted and cooled
2 large eggs, room temperature
1/2 teaspoon vanilla
1 teaspoon cinnamon
1/2 Large Honeycrisp
1 cup Instant Oats
- Pre-heat oven to 350F
- Combine flour, baking powder, and salt
- Dice Honeycrisp apple and set aside
- In a separate bowl combine sugar, butter/oil
- Add in egg, vanilla, and milk to sugar mixture
- Combine flour mixture with wet mixture
- Fold in cinnamon, apples, and instant oats
- Put in muffin tins with wrapper
- Bake for 15-20 minutes or until fork/toothpick/knife comes out clean
